Paella

  • Sautee together and brown...
  • Onion
  • Chorizo
  • Chicken thighs
  • Add:
  • 1 can diced tomatoes
  • 1 can drained white beans
  • Rice
  • Water (For a crowd, I'd do 2c rice and 4 c water)
  • Saffron - though turmeric is a nice option
  • Maybe a bay leaf?
  • Paprika, I think
  • Salt
  • I have put green beans in, on occasion, for the purpose of green veg.
  • Cook until the rice is almost done (no stirring; I forget if lid is on or off; probably off)
  • In the last 10 minutes, spread shrimp (and mussels, if so desired) over the top.
  • Mmm, this is making me hungry... :)
  • We do a stovetop version now that isn't quite as wonderful, but Herdez makes a 5 chili salsa that has chipotle peppers and imparts a nice smoky spice that makes a pass at replicating chorizo + fire.
